Meet Lachlan Baines, Hospitality Trainer at Macquarie Community College.
Lachlan’s journey began over 14 years ago and for the past 4 years, has been sharing his expertise as a Hospitality and Barista Trainer.
Now, as a proud trainer at Macquarie Community College, Lachlan continues to inspire the next generation of Hospitality professionals.
A Passion for Hospitality and Teaching
Lachlan’s career began right after High school when he undertook a Certificate III in Hospitality whilst working at a country pub. His love for the industry grew with every new skill he learned, eventually leading him to pursue an Advanced Diploma in Hospitality Management.
“The more I learned, the more I loved it,” Lachlan recalls.
The admiration for his teachers planted the seed for his future in education. He wanted to guide others just as his mentors had done for him.
After living abroad and working in various hospitality roles, Lachlan returned to Australia, ready to try his hand at teaching. He became a Food & Beverage Instructor at Torrens University, and after four years, he decided to move closer to home.
Macquarie Community College offered him the perfect opportunity to immerse himself in the local community and inspire new students.
Why Teaching Hospitality and Barista Matters
For Lachlan, teaching is about more than just skills—it’s about creating memorable moments for his students:
“I love sharing my knowledge and passion with people. There’s nothing quite like that lightbulb moment when a student learns something new,” he says.
Such approach make the courses at Macquarie Community College truly special. Whether it’s helping students master the art of making espresso coffee or guiding them through the basics, Lachlan takes pride in every success.
He highlights a particular student from a recent class where the student not only excelled during class but made a lasting impression during his work placement at our partner café, Darcy St Project Epping.
Lachlan still keeps in touch receiving photos of the student’s home-made espresso creations.
Building Life Skills
At Macquarie Community College, the Hospitality courses are designed for anyone looking to develop both life skills and professional capabilities.
“This sector is very much about building connections with people,” Lachlan explains. Whether you’re returning to the workforce or starting a new career, this course equips you with the confidence and skills you need to thrive in a fast-paced, rewarding industry.

One of his favourite videos is The Basics of Latte Art — perfect for those eager to learn the intricate art of pouring the perfect cup.
The Future of Barista Training
Lachlan sees a bright future for those entering the hospitality field, especially through programs like the Hospitality courses at Macquarie Community College:
“I would encourage anyone unsure of what they want to do in life to consider hospitality. It offers so many pathways and opportunities,” he says.
